Fennel sausage ragout
The Sausage sauce with fennel - Sicilian recipe < / em> is a preparation of tomato concentrate and pork sausage with fennel, typical Sicilian, which I often use for delicious recipes such as the Perfect Pie (Sicilian recipe) or to simply season the pasta ... If the pasta is homemade obviously everything is better!
The sausage ragù is delicious and above all simple to prepare!
Ingredients

- Pork sausage (with fennel) 500 g
- White Onion 1
- Extra virgin olive oil 30 g
- Tomato Concentrate 140 g
- White Wine 50 ml
- Warm water 100 ml
- Black Pepper (Optional) to taste.
Preparation
In a large pan, heat the oil together with the finely chopped onion.
As soon as the onion is golden brown, add the sausage which has been cut and crumbled and cook for about 15 minutes, stirring occasionally.
Pour in the white wine and let it evaporate for about 10 minutes.
Add the tomato paste, black pepper and warm water and leave to cook for about 5 minutes.
Tips:
If your sausage ragù is too dry, add lukewarm water, trying to obtain the suitable consistency for your preparation.
To season the pasta, I advise you not to prepare a ragù that is too dry.
As soon as the water absorbs, turn off the stove and use your Fennel Sausage Ragù - Sicilian Recipe to season pasta or other preparations.
You can also use the Sausage Ragù to prepare the delicious Sicilian recipe for the "Perfect Pie."
