Spaghetti with garlic, oil and hot peppers
The preparation of spaghetti with garlic, oil and chilli would seem to be one of the simplest recipes to prepare. Sometimes, however, the final result does not always meet our expectations.
Let's see how to prepare it without surprises.
The ingredients are already in the name of the recipe: garlic, good extra virgin olive oil, chili pepper to taste and a nice portion of spaghetti to be cooked separately in a pot.
How to prepare it
- First of all, pour abundant oil into an aluminum pan, the quantity of the sauce is the basis for a good final result.
- Heat the oil over low heat with very low heat.
- Peel and finely chop a clove of garlic (calculate one for every two diners, increasing gradually), which you will gently heat in oil without ever getting it to the point of sautéing.
- Add fresh chilli, always chopped, keeping the heat strictly low so as not to burn the garlic.
- Cook the spaghetti in the pot taking care to taste them to make sure you remove them from cooking when they are actually al dente (at least two minutes before cooking).
- Pour the spaghetti into the pan and raise the heat a little. The creaming of the pasta must be done conscientiously, adjusting the cooking water so that the starch creates the cream wrapping around the spaghetti.
In this way the classic recipe of spaghetti with garlic, oil and chilli will be perfect.
